If you think self-catering is the way to go for your wedding reception,
think again.
A professional caterer will take an immense amount of stress off
your shoulders. Logistics, service, quantities and other details
to food should be the last thing you have to mind on your special
day. Furthermore, amateurs tend to over cater, so in the long run,
hiring an expert can actually save you money.
A good caterer will give guidance and choice within your budget.
Be flexible and listen to their advice. They've been there, done
that. You might favor exotic dishes, but the professional will remember
your guests might have cultural, religious, dieting, allergy and
other restrictions. It's okay to feature unique foods, but push
them to the side and keep your main dishes closer to traditional
lines.
If alcoholic beverages are part of your day, let your caterer organize
the liquor. They can accurately gauge quantities and keep records
of consumption.
Discuss your wedding theme and style with the caterer. You might
prefer lighter fare for an indoor summer wedding, specialty foods
if your wedding day is on or near a particular holiday, or platters
of hor d'ouvres for a simple cocktail hour.
Assume nothing. Picture your idea of what you want your wedding
reception to be, and go over all the details with your caterer.
You'll likely be disappointed if you find disposable dishes used
for your elegant sit-down dinner. It's acceptable to ask to see
samples of their dishware, linens, and so on.
And while chinos and a tee shirt bearing the caterer's logo might
be fine for your beachside party, you might want to ask that servers
wear a white shirt and black slacks, at the very least, for your
formal do. Furthermore, if you're not familiar with your caterer's
services, don't hesitate to arrange for a sampling or to request
references.
Finally, find out if they are licensed, insured and hold a health
permit.
